A propósito del lanzamiento de su libro “Superfoods” en dos librerías de la ciudad de Miami, le hicimos esta entrevista para el nuevo blog de Spanish Publishers.

Carla, cuéntanos de tu andar por el mundo. ¿De España a Massachusetts? ¿De Massachussetts a Miami? ¿Qué es lo que te mueve?

Carla: Tras graduarme de la universidad como dietista-nutricionista en Barcelona, empezó mi aventura personal de cruzar el charco y empezar vida en otro país. Desde entonces he vivido en diferentes estados de Estados Unidos movida por las ganas de conocer diferentes maneras de vivir.

¿Cuál es la peculiariad de tu libro Superfoods? Cuál es la diferencia que propones con relación a otras dietas o sistemas de nutrición?

Carla: En este libro no propongo ninguna dieta, sino que en él remarco la importancia de incluir alimentos de un alto valor nutricional en nuestros platos. Todos comemos, mínimo 3 veces al día, entonces ¿por qué no hacerlo con alimentos que nos aportan altas cantidades de vitaminas, minerales, antioxidantes y otros componentes que son las piezas clave de salud? Los superalimentos no tienen porque ser alimentos exóticos ni caros, estamos hablando de vegetales de hoja verde como las espinacas, la col kale, brotes de alfalfa, lentejas, arándanos… No se trata de restricciones sino abundancia de los alimentos correctos para ganar energía y salud.

¿Qué es la alimentación Crudivegana?

Carla: Se trata de alimentarse de tal manera que los alimentos nunca han estado sometidos a temperaturas superiores a 42-45 grados. De esta manera las pérdidas de vitaminas, minerales y enzimas son mínimas. La mayoría de los superalimentos que propongo en el libro SUPERFOODS se consumen de esta forma.

Normalmente cuando estamos más ansiosos comemos peor, pero a su vez, el tipo de alimentación rápida y desesperada empeora nuestro estado de ánimo. Es un círculo vicioso. ¿Estás de acuerdo? ¿Qué hacer para romper este círculo?

Carla: Totalmente de acuerdo. El primer paso es ser consciente de ello y querer ponerle remedio. No hay alimento más rápido de comer que la fruta, así que un buen cambio es dejar todos los snacks empaquetados para sustituirlos con fruta fresca de temporada. Tomar mucho agua, permanecer bien hidratados, nos ayudará también a prevenir la ansiedad y esos antojos incontrolables. Aahhh! Y deshacerse de todo aquello malo que está en los armarios de la cocina y frigorífico.

La  mayoría de los mortales se fija cuando va a comprar un alimento en el número de calorías que tiene. Tú nos das otros parámetros. El ANDI Y EL ORAC. ¿Cómo debemos leer estos parámetros? ¿Cómo usarlos?

Carla: En el envase de los productos no se señalan estos parámetros así que nos resulta imposible valorarlo. El ANDI y ORAC se mide en laboratorio y es la capacidad antioxidante que tiene un alimento, es decir cuan fuerte es su propiedad para combatir los radicales libres y otras toxinas responsables de la degeneración de nuestras células. Cuanto más alto sea su valor más antioxidante será un alimento.

¿Qué alimento tienes en tu cartera para cuando estás en la calle y te cae un hambre atroz?

Carla: Siempre llevo agua conmigo, y si llevo algo de comida serán unas nueces.

¿Qué alimento no puede faltar en tu refri?

Carla: El agua de coco, toronjas y las hojas de kale.

¿Que recomiendas hacer cuando se empieza una dieta? ¿Ser totalmente estrictos o ir poco a poco? ¿Estás de acuerdo con las dietas a corto plazo o propones un sistema de alimentación para toda la vida?

Carla: No creo en las dietas como tal, lo de seguir una planificación de lunes a domingo solo debería ser temporal, por pocos días y con un objetivo muy concreto. Pero realmente comer bien para ganar energía y llegar al peso ideal es cuestión de seguir un estilo de vida saludable. A no ser que estemos frente una condición médica que requiera un cambio radical, yo siempre recomiendo hacer el cambio de forma gradual para dejar tiempo al cuerpo a adaptarse y hacer del proceso algo sostenible. Cuando queremos hacerlo todo a la vez nos podemos saturar.

¿Cada cuántas horas comes?

Carla: Cuando tengo hambre. El cuerpo es sabio y sabe cuando uno debe comer. No se trata de estar comiendo todo el día por puro capricho, sino cuando tenemos hambre real, de verdad. Es bueno dejar que el sistema digestivo descanse y no esté haciendo la digestión de forma continua.

¿Cuál es tu receta favorita?

Carla: Bien, me chiflan las ensaladas y no me canso nunca de ellas. Mi favorita tiene hojas de kale masajeadas con aguacate, taquitos de tempeh, tomates cherry, apio, pepino, brotes de alfalfa, aceitunas negras, tomate seco, semillas de sesame y todo aliñado con vinagre de manzana.

Algún consejo final para los que quieren empezar a cambiar su alimentación, además de leer el ibro, por supuesto.

Carla: Armarse de amor y respeto hacia uno mismo. Paciencia porque los cambios no siempre son fáciles pero ¡Querer es poder! Toma tu tiempo y no te satures con todo lo que quieres hacer, ve mirando cada día todo lo que ya has logrado.
